6 tbsp ground cinnamon 2 tbsp ground ginger 1½ tbsp ground mace 1 tbsp ground allspice 1½ tsp ground cardamom 1 tsp ground cloves 1 tsp freshly grated nutmeg
Combine all the spices in a small, deep bowl. Use a small wire whisk to thoroughly mix the spices until well combined.
Transfer the spice mix to a clean spice jar. Seal well and label. Store in a cool, dry, and dark spot.
Freshly grated nutmeg has an intense flavor. If all you have is ground nutmeg, feel free to use a little more.
I like my ginger in pumpkin spice, but I want the other spices to be able to shine without making things too “spicy.” Feel free to dial it back.
Label the jar with the date you mixed it.
If you find that your pumpkin spice has lost some of its “oomph” you can still use it. Just add a little more of it than called for.
